- 1 cup cashew nuts
- 2 large onions
- 1 green bell pepper
- other mix vegetables: carrots, green beans, broccoli, etc.
- 1 teaspoon chopped garlic
- 1 teaspoon soy sauce
- 2 teaspoon vegetable oil
- 1 teaspoon sugar
- 1/2 teaspoon pepper
Directions
- Cut chicken, large onion, green bell pepper into cubes, and other vegetables.
- Heat oil in a saucepan and fry the chopped garlic until it is brown.
- Add chicken pieces, gradually add and stir the onions, and green bell pepper, and other vegetables.
- After 2 minutes add soy sauce, sugar, and cook on a medium for about 5 minutes, stirring occasionally.
- Finally put in the cashew nuts and fry for another 5 minutes.
- Add pepper to taste. Serve hot with rice or noodles.
Serves 3-4
