- 1/3 cup sweet soy ketchup
- 1/4 cup chopped fresh cilantro or 1 tablespoon dried cilantro
- 3 tablespoon lime juice
- 1 tablespoon grated lime peel
- 2 jalapeno peppers, seeded and finely chopped
- 1 large clove garlic, minced (optional)
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 2 lb. boneless chicken or meat
Directions
- Marinade, blend all ingredients except chicken or meat in small bowl.
- Place chicken or meat and marinade mixture in a reasable plastic bag. Seal; turn to coat. Refrigerate 8 hours or overnight, turning occasionally.
- Heat grill to medium-high direct heat. Remove chicken or meat from marinade; discard marinade. Place chicken or meat on grill. Grill, covered, 5 to 7 minutes before slicing.
